VICKSBURG CHEESE BALL

There are too many recipes for cheese balls but...This one is my default version.  A gallery of mini, elegant and frankly absurd cheeeballs follows the post.



 
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package cream cheese, softened
1 (3 ounce) package Roquefort cheese
2 Tablespoons paprika
1 cup chopped mixed nuts
 
1.In a medium bowl, blend the Cheddar cheese, cream cheese and Roquefort cheese with a fork until smooth.
2.On a large sheet of waxed paper, sprinkle paprika. Form cheese mixture into desired shape, and roll in the paprika until covered.
3.Sprinkle mixed nuts on wax paper. Roll cheese mixture in mixed nuts until coated. Cover with plastic wrap and chill until serving.  

Use some Parmesan in any cheeseball.  Substitute Gorgonzola or any blue-veined cheese for Roquefort.
