TRADITIONAL FRIED GREEN TOMATOES




     I include a recipe for battered wedges but this is really the way slices should be done-takes practice.  Persevere.
Fried Green Tomatoes should be soft, not those hard inedible breaded and deep fried hockey pucks restaurants serve.
4 large green tomatoes
1 cup cornmeal seasoned with salt and pepper
Mix the meal with salt and pepper. Slice tomatoes about 3/8-inch thick. Dip each slice into seasoned cornmeal mixture. Place seasoned vegetable into a heavy skillet containing hot (about medium-medium high) melted bacon fat or other oil of choice. Fry slowly ‘till brown turning once. Yield: 6 servings
