PICKLED BEET EGGS

     Sliced,halved, quartered or cut into crowns at the equator these eggs add a burst of color and flavor to salads. Doesn’t take any skill to do the "crowns"  just a little practice. Cut "teeth" like you would on a pumpkin all around the equator (cut all the way to the center of the egg or whatever) and gently separate them. Beautiful. You can do any spherical thing this way.

1 can sliced beets
1 c. cider vinegar
½ c. firmly packed light brown sugar
6 whole cloves
1 stick cinnamon
Eggs- approx. 8 or 9
hard-cooked and shelled eggs to fill quart jar.

Put beet juice in sauce pan; add vinegar, sugar, cloves and cinnamon. Boil gently ten minutes; strain and pour over eggs. Keep refrigerated.
